Hey Patricia! You can definitely use chicken breasts instead of thighs! Just be mindful that they cook a bit faster, so keep an eye on them to prevent overcooking and drying out 🙏

Absolutely delicious and very healthy. I did cut back on the cayenne pepper and fixed cauliflower rice instead of white rice.
