This worked much better on the second attempt. I used thigh fillets as that was all I could find, and added an aubergine to the roast veggies as it needed to be used up. Absolutely delicious. 11/10

Tasted better than it looks in my photo. Couple of points I’ll try next time is to mix the spices ( paprika, Italian herbs and onion powder) together first before coating the chicken. And to flatten the chicken breast a little so they look like they do in the video. Otherwise delicious and very tasty.
